Vibrant new menu for Paper Crane
It’s touted as a foodie’s nirvana and with menu items like Tropical North Queensland mud crab in Singaporean sweet chilli sauce, Paper Crane hoisin duck rolls and Grilled vegetable gyoza with black vinegar, we’re in heaven at Riley hotel’s modern Asian fusion restaurant Paper Crane.
Paper Crane may still be new and exciting, only having opened in November last year, but Riley Hotel Executive Chef Tyrone Hunt has launched a vibrant new menu that must be discussed.
The menu features pops of colour and spice, as much a visual feast as it is a culinary one. With dishes like Braised beef cheek with daikon and pickled veg, Deep fried whole Reef fish with green mango salad, Duck confit khao soi lao curry and Onion bhaji served on a mint and pea puree, we see inspiration from Japan, Thailand and India, as well as the rest of Asia, earning the restaurant’s place as one of Cairns’ favourite modern Asian fusion haunts.
Crystalbrook Beef dishes and whole crustaceans are highlights of the new menu with dishes like the Crystalbrook short ribs slow cooked in Asian marinade, and the Crystalbrook dry-aged beef which is aged for at least 60 days to increase flavour and tenderness, and of course the Local mud crab in Singapore chilli.
As well as owning three 5-star hotels in Cairns – the newly opened Riley, soon to open Bailey, and 2020-scheduled Flynn – Crystalbrook Collection also owns and operates a 35,000-hectare, 4,000-head of cattle farm, Crystalbrook Station, located near the Tablelands. This allows Crystalbrook to supply its own Crystalbrook Beef to Paper Crane and its sibling restaurants.
But, of course, with a growing focus on plant-based options, there are dishes for the herbivores as well; think, Scorched cauliflower san choi bow served with chilli, Asian herbs and fresh coconut, and Wok-fried tofu with black bean sauce, Asian greens and steamed jasmine rice.
